I am in beautiful Uzbekistan and we are heading towards Shirin Village. With its cobblestone streets, bustling village square, and bountiful orchards, it offers a glimpse into authentic Uzbek life. Locals, renowned for their hospitality and craftsmanship, preserve age-old traditions amidst the tranquil beauty of their surroundings. Inside the village, a cozy hostel beckons visitors with the warmth of a Korsi, a traditional heating stove, around which guests gather to enjoy fragrant tea and exchange stories. Afterward, we ventured to witness the preparation of local delicacies like bichak, samosa, and salty seeds (daneh shooreh), skillfully crafted by village women, each dish a testament to the culinary heritage of Uzbekistan.
The local delicacy known as Bichak is a true culinary delight! 🇺🇿
The process begins with a sprinkling of pepper and salt on flour, followed by a thorough mixing with water to create a dough that is kneaded vigorously. The dough is then flattened and cut into portions, where it is filled with a delectable combination of chopped spinach and onions mixed with salt.
The filled dough is carefully shaped, rolled, and flattened before being baked in a beautiful charcoal oven - the heart of the process. Once cooked to perfection, the Bichaks are brushed with oil to enhance their flavor.
The result? A mouthwatering treat with a crispy exterior and a savory filling of spinach and onions. Accompanied by is the famous Nishalda dessert, a sweet delight that mirrors the warmth and richness of Uzbek hospitality. a refreshing cup of Uzbek tea, this dish is a true reflection of the flavors and traditions of Bukhara.
In addition to the delightful Bichak, the locals in Bukhara also savor Uzbeki flatbread and Daneh Shooreh, a unique snack made from salted seeds. The process of preparing Daneh Shooreh involves boiling and mixing the seeds with salt until they crack and release their irresistible flavor. The final product is a crunchy snack that is as fascinating to make as it is to taste.
Bukhara's culinary scene is truly a treasure trove of flavors and traditions that are sure to leave you enchanted with every bite.
