Actually thickness is square growth you need in time to cook. So if normal 1cm toast take 2 minutes to grill. It will take 4 minutes to grill 2cm thick one. (Its example not valid cooking time) - As in video Outside will be long burnt before cheese melts.

  • I'm actually impressed how much Chef Ramsay fucked up a grilled cheese sandwich. Using fancier ingredients is debatable as fucking up goes, but he literally burnt the bread and kept the cheese unmelted which is the only two things you're not supposed to fail at. Adding kimchi for acidity is extra fucked up on top of failing the very basics of making a grilled cheese. I'd be even more impressed if somehow Chef Ramsay defends this objectively massive fail.

  • "Gaslighting" is a reference to a hugely successful 1938 theatrical play "Gas Light", 1940 British motion picture "Gaslight" based on the play, and an 1944 American remake that departed somewhat from the original play. The American version starring Charles Boyer and Ingrid Bergman is the most widely known and is universally recognized as a classic. The husband in the movie manipulates the house lights (which were gas instead of electric) and other situations to make the wife think she's crazy.

And to address the issue with acidity: I worked at a place that would put a couple of slices of dill pickles on top of the grilled cheese. I couldn't understand it. Then one day, one was dead in the window so I snatched it up and scarfed it down. I must say, the acidity offset the savory and really knocked it out of the park! So much better with just a bit of dill pickle.

  • I'm completely with Uncle Roger here. You can make gourmet versions of grilled cheese but there are still rules. 1) low, controlled, even heat in the pan. Do not use a fireplace, bonfire, etc.. 2) soft bread that isn't cut thick and soft cheese that is also thinly sliced. 3) consider the harmony of your flavors - turkey & Swiss, ham & munster, apple slices (sliced thin) & brie. Nothing about dry Italian cheese and kimchi makes me think they'll go well together. I suspect a very disharmonious mix of overly salty and overly sour flavor, in a sandwich that's unevenly cooked, burnt in parts, and just a mess all around.

    @xarkos@xarkosАй бұрын

  • If I had to guess, Gorden has never had an American grilled cheese sandwich, or more likely he prefers the British Cheese on toast. Unsure how to proceed due to lack of probably remembering the essence of grilled cheese, he went with the thinking of grilled cheese is just two cheese on toasts put together. This is important in that cheese on toast is made with a broiler. With the heat passing through the cheese. While grilled cheese are made with the heat passing through the bread to melt the cheese.

    @IchiroFuma@IchiroFumaАй бұрын
    • As a British connoisseur of cheese on toast (my father is the cheddar melting maestro and taught us well), Ramsey failed epically on this one. Our method: Cut bread no thicker than half an inch, toast it, then (optionally) butter. Cut cheese no thicker than quarter of an inch (ideally cheddar, maturity level to suit taste (dad likes extra mature, I prefer mild or mature). Never use low fat: it goes weird. You can use grated cheese but imo it’s unnecessary extra effort (and washing up) and bits can fall off. Cover toast with one layer of sliced (or grated) cheese. Place under medium to high heat grill (it’s exactly the same thing as a broiler, just a different name) and watch it like a cheese-loving hawk until the cheese bubbles. If you’ve cut your cheese properly, covered your toast adequately, and not blinked, the toast won’t char before the cheese is dancing merrily. Take it out and eat before it rehardens. Add a grilled tomato instead of kimchi (though that was the only thing I didn’t mind in the Ramsey cheese disaster, and probably saved it). You can slice tomatoes and place on top of the cheese before grilling, but they won’t allow the heat to fully melt it if you do. Definitely going to have cheese on toast today. With some sweet little piccolino toms. (Maybe a dollop of kimchi too.)

  • When I make a grilled cheese, I use a good cheddar or even just kraft singles. Butter the bread, place it in a low/medium flat grill with the cheese in the middle kind of like how Gordon did it. I flip every 20-30 seconds while placing firm pressure on the bread without crushing it. It toasts very slowly while allowing the heat to travel through. The results are perfectly toasted sides with an incredibly gooey middle.
