香蕉 banana 1 / 100g
全蛋 whole egg 1(55g+- per egg)
鮮奶 fresh milk 70ml+-
即溶酵母 instant yeast 5g / 1/2Tbsp
無鹽奶油 unsalted butter 40g / 3Tbsp
长模 Pan size 22cm x 6cm x 10cm 2
摄氏180 / 华氏356 烘烤 17-20分钟
Bake at 180°C / 356°F for 17-20 minutes

  • I just made this: It tastes nice! It's more like a not-so-sweet plaited bun instead of a bread though and there's only a very, very light aftertaste of banana - you probably won't taste it unless you know that the recipe asks for a banana. A couple of tips: 1. Yes, you can use all-purpose flour. 2. I replaced the milk powder with 2 tbsps of flour. 3. I put the egg in a measuring cup and filled it with milk up to 160ml. 4. Don't add more than 1 banana! I added 2 small ones (instead of a single big one) and the dough became really sticky, so I had to add more flour! 5. Yes, kneading it for 20 minutes is necessary, the dough'll end up really smooth and elastic. 6. Yes, letting the dough rest that often/for that long is necessary to give it that "airy" texture.

    • Did you add too many bananas too? I think I used about 0.5 times more flour than what the recipe asks for (if I remember correctly) but I'd recommend adding just a little bit at a time anyway, so it doesn't end up too dry.

    • @@Juleru ok couldnt stop thinking about it so i baked it now ok so i only put 1 banana but technically it was about 3 cups of flour came out soft no banana taste so i drizzled honey and sprinkled powder sugar and done soft and delicious

  • Made this at night thinking to enjoy it next morning with a cup of coffee. All I found was an empty bread box when I woke up 😭. My 17yr, who never liked bread (and banana), devoured it at night while I was sleeping. 👍🏻😋 (I didn’t have milk powder so I used a mix of heavy cream and homo milk for the 70ml milk. It turned out great, I definitely will try the milk powder version next time)

  • Just made this with all-purpose flour and granulated sugar and omitted the milk powder. Made one big loaf instead of two small ones and baked in a 9x5 loaf pan for 20-25 min. Came out great! I might use a less ripe banana next time so that the banana flavor is not as strong, but overall it still tastes great.

  • My adapted version for Americans, if anyone is interested. DRY: 2-1/3 cups BREAD FLOUR (350g) 1/4 cup SUGAR (30g) 1 tsp. SALT 2 Tbsps. DRY MILK 1/2 Tbsp. INSTANT YEAST WET: 70ml MILK (.33 cups barely more than 1/3) 1 large EGG, beaten 1 BANANA, mash to lump-free 3 Tbsps. unsalted BUTTER (40g), cubed 1 Tbsp. BUTTER softened for after baking glaze 2 BAKING DISHES each: 8-1/2 x 2-1/2 x 4 inches, buttered Preheat Oven 200°F. As soon as it reaches temp. shut off but don't open door. 1) Large Mixer bowl: whisk DRY ingreds. Transfer to waxed paper and set aside. 2) Same bowl: Whisk WET ingreds. until lump-free. 3) With dough hook attachment: Carefully mix in DRY ingreds. Once combined raise speed to #2, mix until it comes together in ball and bowl sides are clean. 4) Add cubed butter and continue to mix until well combined, about 7-mins. 5) Transfer to clean work surface and do a finish knead. 6) Flatten w/fingers until you can tri-fold dough as you would a sheet of paper for an envelope. Turn 1/4 quarter, fold again. Repeat 3-times total. Tuck edges under forming smooth boule. 7) Corral boule w/palms of hands, and circle dough on work surface making a smooth boule. 8) Place into lightly oiled bowl, cover w/plastic wrap. 9) Place in preheated oven to PROOF: 1 hr. or to double. ASSEMBLE: Prep baking dishes and preheat oven as you did before, turning off at temp. 1) Using fist punch down dough. Transfer to clean working surface. Flatten divide in half. 2) Barely sprinkle a piece w/flour, roll out to match longest point of your dish and 3x the width. 3) Roll dough jelly-roll-fashion into a log, until log is length of dish, pinch edges to seal dough. 4) Cut 8-slices, adjusting slices to keep their shape in the log, as you go along. 5) Lift slices, keeping them as a loaf, and place carefully in dish. Repeat w/second dough piece. 6) Cover w/plastic wrap and repeat 1 hr. PROOF. Preheat oven 350°F at halfway point. 7) Remove plastic and BAKE: 350°F for 17-20 mins. or until golden. 8) Brush w/softened butter while still warm.

  • I used this recipe this morning! I also added a tsp of vanilla extract and along with smell of the banana it was hard to keep from eating the dough lol. The banana flavor is subtle and the end result was incredibly moist and chewy. Ty!! ❤️

  • Excelent recipe with bananas and a good enterteinment I am passing to a quarantine in my appartment in Ecuador. I am making since 3 or 4 monts ago something similar with bananas: "hot cakes" without flour just adding eggs and quaker oats and putting other ingredientes as nuts, raisins, chocolates or others equal ingredients as them. And bananas give the sweetest flavor to them, preferably when they are very mature when the peel cover is full of coffee points.

  • So, I made this today with a few minor alterations. I warmed up the milk a bit in the same bowl I smushed the bananas in and I added 1 tsp of real banana extract for more banana flavor, and then added the egg. And Oh...My....Goodness😍 it was so delicious that my son ate one whole loaf 😅, I hid the other one. It was full of banana flavor and so moist, I will be making this again for sure. Thank you for this amazing recipe😊👏🏽.

  • I made this following ingredients and instructions and it was AMAZING!!!! Very soft, chewy and full of flavor. Hint of Banana flavor. It did not survive till the next day. Thank you Apron, your recipes are always bomb (very good)

    • shawniekc not at all - I’m sometimes quite impatient and had troubles before with other recipes but I let my kitchenaid knead the recommended 20 min and was able to take it out in one piece :)

    • @@shawniekc after the butter, dough seems to fall apart.... just needs a little work for a couple minutes and it all ends up blending just fine.

  • the 'who's here because of ....." question/answers were the best thread I have read in a very, very long time. In isolation, I am rather dependent on this type of communication for any conversation. I live in the So. Colorado Mtn. @ 8,500 elevation in a town of 400 so honestly isolation is rather certain. This video was fabulously entertaining and I will most definitely attempt this beautiful creation even with the challenges of high altitude baking! thank you!

  • I just made this recipe, I allowed myself to add pastry cream (custard cream in french 🇫🇷) and chocolate chips. The result was stunning and the whole family was conquered.

    • Cassandra Randria of course, it’s very easy and It just takes five minutes to make it homemade. i say pastry cream because it’s the translation of the french name, bit i think in english it’s custard cream. if you want the recipe, i can send you with pleasure.

  • I have tried this recipe three times. My advise: if you have no mixer and you're doing it by hand DO NOT put all the milk in the bowl at once. Apply gradually as needed. Otherwise the dough is going to be too liquid

    • @@Apronyoutube I tried in 1 1/3 cups of bread flour it was sooo sticky so I added more bread flour, my dough did not rise. Then I tried all purpose flour 2 1/3 cups , 1/2 TBSP instant yeast again the dough did not rise. Should have I increased the yeast to 1 TBSP. Also you said 70 ml fresh milk, that only equivalent to 4 TBSP and a little bit. Shld have I increased the fresh milk to to 170 ml. Pls advise
