Please be advised that like certain shellfish, some people may be unable to safely consume insects due to dietary allergies.
Take a deep breath and come prepared with an open mind because today Joseph Yoon from Brooklyn Bugs is teaching us how to eat (almost) every edible insect there is. Now, we know what you're thinking - aren't tarantulas and scorpions arachnids, not insects? Also, why are you doing this Epicurious? First, yes but come on. And second - trust us.   • As a mexican I can confirm that insects have some original flavours. It's not in our main diet but you can find them easily looking for bolder culinary options.

  • Honestly, I'm 100% ok with eating bugs, as long as my eyes can't register that it is indeed a bug. I can know it's a bug and be perfectly fine, but the second I see a leg or feel a wing on my tongue, it's game over

  • I've had black ants before. They are definitely very zingy, kinda like a mix of black pepper and ginger. I've even eaten them as garnish for ice cream in a restaurant once, very unique

    • Black ants dont have venom (cmiiw☺), the red one has... I always eat any black ants or termite (theyre not as big as the one in this video tho, probably only half-1mm) that got on my food 😂 too much of a hassle to dismiss em 😂

  • I once had to proctor a test for a nutritional studies professor who'd brought in a bag of cricket-flour cookies for her class to try. She looked a little bummed that so few people wanted to try them, so I went up and gave it a shot to embolden more people. It really isn't bad! The chitin flakes definitely stick in your mouth a little bit, kinda like the papery outside of peanuts, but the flavor is like sunflower seeds.

    • You say that, but I promise you've eaten something with a similar flavor profile and weren't bothered, so if you got over the mental block, you'd be fine. I felt the same way, but at this point, I've eaten snails and crickets myself. Crickets, when fried and flavored with things like 'salt and vinegar' or 'cheese powder' honestly just taste like tiny potato chips. Same crunch, no lie. As for snails, I swear to you, they taste SO MUCH like clams. If you like clam chowder at all, and if someone made it with snails without telling you, you wouldn't think anything of it.

  • In Brazil we do have some insects in our culinary, mainly the queen ant "tanajura" abdomen fried in a farofa. Actually, I tried crickets once on a research, where they were repeating the testings (us trying crickets) on different places around the world to see the acceptance of people around consuming insects. The crickets would be better with seasoning, cause without them they taste like dog food.

  • For everybody commenting about how they don’t dislike the idea, and the benefits make eating insects worth it, but being scared of bugs, it is worth noting that what he did with crickets already has another use. Grinding crickets up into a powder allows them to be used as flour, and then baked into a protein-rich bread. It’s a great way to consume insects without knowing it’s insects!

    • Ive eaten bugs regularly as a kid in Vietnam before and let ne tell you. Roasted crickets are so good. We put cheese power or instant noodle powder on them and just munch. Smokey savoury crunch. As long as i closed my eyes anyways. I never had a problem with bugs just the thought of eating one even tho they are freaking delicious

    • The phrase "his truth" and/or "my truth" clearly tell me that it's not actually true So people talk about how bugs have an amazing amount of protein compared to meat or other foods, the way we ESTIMATE protein in food is by nitrogen content. Bugs, by mass, contain a huge amount of chitin, the exoskeletons of crickets and the skin of worms and stuff, and chitin is a polysaccharide with amine groups attached, so it's got a pile of nitrogen in it. It is completely indigestible and it's NOT protein. Some may say the people measuring protein content wouldn't make that mistake, but obviously we can't trust them to accurately represent their findings, they're the people telling you to eat boogs after all. Incidentally, chitin is an antigen in humans, it causes an immune reaction because the body uses its presence to infer a parasite or a yeast infection, so whilst it won't inherently "give you" cancer or any other disease, eating lots of chitin would very likely reduce your immune response to other illnesses.

    • I've eaten snails and crickets myself. Crickets, when fried and flavored with things like 'salt and vinegar' or 'cheese powder' honestly just taste like tiny potato chips. Same dry crunch, no lie. As for snails, I swear to you, they taste like clams. If you like clam chowder at all, and if someone made it with snails without telling you, you wouldn't think anything of it.

    • Insects do tend to have a somewhat nutty flavor profile though. They're not all the same. Like, you wouldn't confuse an almond for a walnut. But there is that kind of earthy-woody quality that gives nuts their flavor, which insects share. Its legit food, if you can shake off your cultural biases.

  • You should do a method mastery named 'How to grind every herb and spice'. It would showcase the way to grind, grate or powder the spice or herb. The tools used could include a grater, grinder, microplane and others. Then what you would use that spice for.

    • This would also include what does most of the good for and how to use them. I want to add more spices and more variety in my cooking but I literally have no idea where to start and what to do with them. And I don’t wanna start throwing in random spaces and ruining food. But I also can’t seem to find any like, usable pieces of information that help me understand what kind of spices go and what kind of foods or flavors

  • Honestly, yeah- I'm convinced. It's a little hard to find many of these but crickets and ants were two you had me more excited for and those were pretty easy to order in food grade quality. I have to admit, being someone who doesn't even like jello - bamboo worms are something I'm still going to decline but the rest of these? Yep, would definitely be inclined to at least try if properly prepared

  • I find that there is such a stigma against bugs that even though I want to eat them, I am compulsively disgusted by them. With that being said, I find the spread of knowledge on how to eat these bugs is unbelievably important for sustainability.

    • Honestly, I genuinely wanna try all kinds of food at least once, including bugs, but coming from a poor and abusive home, bugs being in food normally means that food is bad, and when you've been forced to eat weevils or you've seen maggots all over your kitchen as a child then it gets hard to get over the idea of eating bugs and it is something that grosses me out a lot, I hope it's something I can get over in the future cuz I find this genuinely interesting

  • 3:20 fun fact Insects, scorpions, spiders, crabs are all arthropods but belong to different classes. Insects - insecta Spiders and scorpions - arachnida Crabs and shrimps - crustacea.

    • @@anthraxmacabre5200 eh, not really. simple way to tell is that spiders and scorpions have 4 pair of legs, where adult insects only have 3 pairs, hence the group name "Hexapods" Arthropods have mainly 4 groups Insects (Hexapods); Myriapods (including centipedes and millipedes); Arachnids (including spiders, mites and scorpions); Crustaceans (including slaters, prawn and crabs). Spiders are not related to crabs nor other insects, if it relates to anything it relates to scorpions.
