牛雜是東南亞、廣東、香港常見的小吃,由牛的內臟煮成,包括牛胃、牛心、牛肝、牛腎、牛肺、牛沙瓜等等。 通常與白蘿蔔一起煮,再以濃鬱的柱侯醬汁或滷水汁調味。
關於牛雜的起源,相傳是上古一位大王在先農壇親耕祭祀農神時,突然天降大雨,大王看到當地百姓飢謹,立即下令屠宰親耕的牛,將其牛肉、牛肚 、牛心、牛肝、牛百葉、牛腸等放入鍋中。 百姓食後醇正鮮美,味道甚好。 至此流傳於廣東等地。 由於其蛋白質較高,營養豐富。 且容易被胃腸吸收,是有益於健康的絕佳食品,後來被人們稱之為「牛雜碎」。
廣州被稱為是牛雜的發源地。 和味牛雜蘿蔔據說是光緒年間一個居住在光塔寺附近的回族廚師發明的。 光塔寺是一座歷史悠久的清真寺,附近一帶曾是信奉伊斯蘭教的回民聚落。 出於宗教信仰,伊斯蘭教教徒都不吃豬肉,故一個回民廚師就想到在光塔寺附近開了一家牛香店。 他用牛腸、牛膀、牛肺、蘿蔔用加了花椒、八角等五種味料的醬汁慢火炆好幾個小時,等牛雜炆透了,而蘿蔔又吸滿了加入牛雜味的 醬汁後,再剪開小塊,用小竹籤串著醮辣椒醬吃,曰為和味牛雜蘿蔔,入口回味無窮。 此味一出,果然吸引附近的回民甚至非回民都來光顧。 於是,善食的廣州人都紛紛仿效,和味牛雜蘿蔔一味流傳至今了。

Seeing that the local people were hungry, the king immediately ordered the slaughter of the cattle he plowed, and their beef and tripe. , beef heart, beef liver, beef louvers, beef intestines, etc. into the pot. After the people eat it, it is pure and delicious, and the taste is very good. So far it has been spread in Guangdong and other places. Because of its high protein content, it is rich in nutrients. It is easily absorbed by the gastrointestinal tract and is an excellent food that is beneficial to health. It was later called "beef offal".
Guangzhou is known as the birthplace of offal. Japanese beef offal and radish is said to have been invented by a Hui chef who lived near Guangta Temple during the Guangxu period. Guangta Temple is a mosque with a long history. The nearby area was once a settlement of Hui people who believed in Islam. Due to religious beliefs, Muslims do not eat pork, so a Hui chef came up with the idea of opening a beef incense shop near Guangta Temple. He used beef intestines, beef bladder, beef lungs, and radishes and simmered them for several hours in a sauce with five spices such as Sichuan peppercorns and star anise. When the beef offal was cooked thoroughly, the radish was filled with the beef offal flavor. After making the sauce, cut it into small pieces and eat it with the chili sauce on skewers. It is called Wagyu beef offal and radish, and it will leave you with an endless aftertaste. As soon as this smell came out, it really attracted the nearby Hui people and even non-Hui people to come and patronize. As a result, people in Guangzhou who are good at eating followed suit one after another, and the Japanese-flavored beef offal and radish has been passed down to this day.
