Harvest and Preserve Cabbage | Canned Coleslaw + Sauerkraut

Today is the day we harvest our large Alaskan cabbage grown under the midnight sun, weighing in at 37 pounds leaves and all! We work to preserve our abundant garden harvest through fermentation, pickling and water bath processing.
~ Canned Coleslaw Ingredients ~
Sliced Red and Green Cabbage, Carrots, Beets and Kohlrabi
~ Canned Coleslaw Brine ~
2 parts vinegar (of your choice) to 1 part water
Sugar as desired
Peppercorns, brown mustard seeds and celery seeds
~ Canned Coleslaw Instructions ~
Sprinkle kosher salt over vegetable mixture, allow to sit for 1-2 hours then rinse well and drain.
Heat brine ingredients and prepare canning jars. Each jar needs approximately 1/2 to 3/4 cup of brine.
Pack coleslaw mixture into jars, pour hot brine over leaving 1/2 inch headspace.
Lid and band jars, process for 20 minutes in a water bath canner.

  • Beautiful to see you actively living. I'm tired of the complainers on KZhead about this happened or that happened. People are dying due to hurricanes and poverty. Due to isolation and lack of healthcare. Your channel is a real break seeing young people trying to do something in this capitalistic society. Give your labor to yourself and make yourself happy. Stay healthy and happy when you're young so that if you don't make it to 65. You won't be devastated by a country that doesn't believe that you deserve healthcare. What you two young people are doing is amazing and wonderful.

  • Since I found your channel 3-4 years ago, y’all have motivated me to start my own garden 2 years ago and I can hopefully learn to can food next year. I’m no where near as successful at as y’all are in my garden,but I’m slowly learning and I really appreciate how you explain things and tell us the way you do things. I also love how you cover so many other things like bee keeping, fishing and hunting, preserving food and cooking. I just wish I could go fishing for salmon, but sadly they never come to NC except in the freezer section. Thanks for sharing your life with us.

Though they often used just fried cabbage and onions in a TON of butter with egg noodles (and a ton of pepper). It's good both ways, with bacon or butter or both of course. Best comfort food!

  • Alaska veggies will always be elite. They get so crazy big!! We lived in Fairbanks for 3 years and plan to move back and start our own little homestead in 5 years or so. Letting our kids spend as much time with the grandparents first. I cant wait though. Yall are doing amazing!

The last thing was the best: dill and garlic green tomato pickles, omg I wish I'd canned dozens of pints more...but I just wore out. I regretfully committed the last half bushel to the groundhogs.

  • First, I like seeing cold climate gardening. Second, the chemistry between you two is inspiring. Finally, I REALLY LIKE how you do a subject from start to finish. Cabbage to sauerkraut for example. Instead of slicing up a video into many smaller videos which may do better in the algorithm. Also, I'm not an historical fan of cabbage, but in recent years I found out that it's not bad if you salt it. And this video alone has inspired me to start growing cabbage in my Montana garden.

  • We grew cabbage commercially in Michigan for years, you bend the head of cabbage to the side and it will often snap at the stalk, if not, we use machetes - one hand on the cabbage and one to chop the stalk. Makes VERY quick work of harvest! Also, when our son was in kindergarten, he wanted to take a cabbage to school, we couldn’t put the head in a brown paper bag, it was WAY too big! We had to take it to school for him for show n tell! He was proud!!!

  • Ariel. You should try making cabbage rolls and canning in pints process for 75. I make small rolls and can get 3 to 4 in a jar. I add my homemade tomato sauce. Excellent. Doing them again this year too. I’m making your slaw right now. Keep coming. You guys are great.

  • I have a ton of sauerkraut I made for the winter, both a traditional version with juniper berries and another "curry-kraut" with ginger, tumeric, garlic powder, chile, and a bit of black cardomon for a bit of smokey flavor. SOoooo good. Can't wait for turnips/rhutabegas to be ready so I can make sauerruben, which I actually prefer to sauerkraut. I love eating seasonally, it really connects you to the rhythm of God's beautiful creation. God bless!
