The BEST and EASIEST Smoked Salmon Recipe *FIRE* Catch and Cook!!

The salmon recipe is so easy, it just takes time.
1 qt water
Slightly less than 1/3 cup kosher salt or 2 oz fine salt
1 cup or just a bit more of brown sugar
-After prepping Salmon, soak meat in brine for ~18 hours (For more salty fish let soak longer)
-Remove and pat dry
-Let sit under fan in a cool room for 3-4 hours until sticky layer forms on salmon surface
-Add any extra seasoning if you wish (Pepper/spices)
-Smoke at 180ºF for ~2 hours while basting with honey, maple syrup, jam or something else sweet every 20-30 minutes

My very first, early memory is living in Alaska. Was on a pier with my Dad, who was a tugboat operator in the Army. I was about three years old, and my mouth began to water from a smell I had never smelled before. There was a smokehouse there, and the smell from it was something I had never encountered, being as young as I was. I asked my Dad 'what is that good smell'? He said 'that is smoked salmon; a fish we catch in these waters'.

And relax about the fire, you are at the beginning of a journey and you are making a very good beginning. 30 years from now you will be smoking those as whole, fully cured fillets, slicing them thin, and drinking single malt. My brother in Victoria has an Arima something like yours and two weeks ago I was out with him. Came home with two, same size as yours and 4 large Dungeness. We are not quite as loud as you two, but we still jump around a lot. I am 77 and he is a youngster 63. Keep up the good fun and stay safe.

I absolutely have to thank you for this recipe, first time I tried it worked out great ! Now I use half brown sugar half raw palm sugar and a spoon full of honey in the brine plus I leave it for 22 hours then 5 hours in cool room with a fan and find it keeps the fat in the fish through the smoke at 225 for 1- 1.5 hours depending on how thick once the fish hits 140 - 150 I let it rest and it’s perfect !
The funniest part is when he goes out to look for that guy to try his recipe. I mean who does that better than the candyman? Yo, you gotta try this crack cake I just cook up. Are you gonna eat that? And to top it off, that golden nugget is inside a zip lock bag. Sounds illegal trade but it is not. Thanks for the laugh guys.
