Looks like you're growing elephant ear tubers. If so, all parts of the plant are poisonous while raw, but once cooked the tubers are edible
Elephant ears belong on elephants. They have no business being on a plant. They're called Taro.
Elephant ear plants grow wild here in Florida. The leaves look like taro leaves. Raw taro tubers are also poisonous and must be cooked.

I am growing six different varieties in my garden. I am retired now, been growing taro since I was a kid. I can tell you with certainty that the ones that he planted are not the same as those he hatvested. All I am saying is, it's kinda silly naming a plant after animal anatomy. What's next, elephant's tail? Then what? 😅
