  • @tafeykey because if you cut it flat you can use it as a nigari sushi or sashimi, it just make it more presentable, but of course you can cut it to whatever shape you prefer, Keep it mind they are a very delicate texture, so every cooking procedure count, in terms of shape and cooking time.

  • It's actually taste very good as raw, crunchy clam texture. When it cook, it's only take a few second to cook in a boiling water/broth.

  • Gotta luv them g-ducks best tasting clam in the world (IMHO) I started digging and eating them about 20yrs ago. If you ask a lady friend of yours to go digging ducks and if she takes to it then your gonna get some! , cuz the ladies dig them ducks!!

    • Stainless Steel Chef Knives MUST be maintained properly. It's less about what brand you buy and mostly about how well you maintain them. Sharpening them to a razor sharp edge is an art and a lot of work. Bourdain likes regular steel knives because they can be sharpened to razor sharp with less work. He feels they are easier to maintain and just as good with the correct sharpening technique used regularly.

    • In a sushi restaurant where I once worked they cook just the body in shoyu and dash stock bit of saki and sugar and ginger to taste. This was given to go with alcohol after. Pretty tasty with beer.

    • Can But it will taste better raw, even with salad or Sashimi style If you must cook it, I would recommend sautéed Quick and barely cook Fully cooked will be chewy

    • quacksackerthegreat Starfire I am no expert, but I had a biology teacher discuss it this way. We were looking at sections of crayfish under the microscope and they were full of parasites. When asked about this, the teacher discussed that we should never eat fresh water creatures without cooking them. The content of salt in our body is low enough that the parasites could infest us too and do pretty bad damage! The logical question then was, why do people eat sushi raw? His explanation was that sushi was made from ocean creatures and their salt content was way higher than ours. Parasites tuned to live in an ocean creature can not survive (maybe thrive) in our mostly minimal salt content.

  • Do you mean "crunchy"? Crunchy is like nuts or carrots. You don't really hear "crunchy" with fish unless it's fried or something; like tempura. Maybe you mean it firms up and gets more of a bite? Do they have a strong smell like squid? All that water they hold makes me think they would smell.

  • I think this is one type of clam that you can leave alone . I'm talking from an eating point a view. The Geoduck clam can live up to 145 years in the sand . Who the hell would want to eat something that old?? how good can it taste ? It cant

    • +Giovani22 They taste very good. Would you like to know how old a lobster can get? If you ate a large lobster there is a good chance that it was older than you. If you ate and orange roughy fish there is a possibility it was alive for the end of the American civil war. I have ate one and it was very good.

  • Funny how some are saying how awful a large clam is eaten raw. It’s totally natural what we were born to eat, but think nothing about eating highly processed hot dog that have filler. Nothing about a pig is wasted pig ear, snout, face , are used in hot dog , unless it’s a top brand and says 100% meat. Goggle it if you don’t believe, homogenize milk too is make to have milk all year long. Could that be the reason why why young are having period at 9 years old? Just saying stay away from process food as much as possible it’s will not age as much.

    • Dude seriously? Geoduck served cooked or raw as sashimi IS the king crab of all clam meats, and I bet that how you feel is the very same reaction that people had after some chef first invented chocolate fudge pudding. I remember my five year old brother saying "EWW how can you eat that?!" when I made instant fudge pudding the first time. It took years before he tried the stuff and he truly regretted every day he did once he got the courage and finally tried it. The meat of a geoduck is sweet and firm like conch meat, and even most people who can't handle the fishy flavors of seafood melt into flavor ecstasy after tasting the meaty flavor explosion that this this tasty jewel of the pacific ocean.
