How to hang ribs on the Oklahoma Joe's Bronco Drum Smoker
Hanging ribs is one of the best ways to get a real deep fire and smoke flavor profile on the drum smoker. The @OklahomaJoesSmokers come with the meat hanging kit for the Bronco so this makes it easy.
Typically I hang about 4-5 racks at a time, but you can hang safely between 10-15 racks. Hanging without the heat deflector is the way to go as well, that's why it's important to start a small fire. I love using the minion method for this one. Matter of fact, there are very few cooks that I run in the Bronco without the minion method.
Today I hung baby back ribs with a little homemade rub.
Rib Rub
2 tbsp Kosher Salt
2 tbsp Coarse Pepper
1 tsp Ground Sage
Smoke for 2 hours Hanging and then wrap for 1 hr. Keep Temps at 250-275. Preferably 250° unless you like fall-off-the-bone ribs.
What I've presented to you is a very bare-bones recipe and method. You can complicate it any way you'd like. I will never recommend spritzing, saucing, or any of the Fluff Stuff. Keeping it simple is how I've helped hundreds of people get into BBQ and minimize failures.

So you leave the exhaust wide open and then adjust with the intake, correct I have always had a heck of a time getting the temp stable

I've run my Bronco for 32 hrs @250 with 1 load of charlogs. No Mods, no assist. You don't need it.
I live in a higher altitude and have had issues with it going out or keeping it low / slow occasionally I would have to hit it with a Milwaukee bench blower to raise temp back to 250 so this is why I got the blower. not as bad when its hotter outside but more in the winter@@CookinWidKunchi
@Sauce1977 gotcha... I live in Florida so I have no experience with altitude and the Bronco. I love mine though. Just upgraded to the pro

Get the drum, set it and forget it especially this brand. Come to my tiktok I have tons of tutorials. I've run this for 21, 26, 32 hrs with one setup of charcoal.
