  • My buddy and I have been doing Scotch eggs in the smoker for awhile now. We still bread the outside of them (no flour and egg, just breadcrumb). They're excellent and popular at the cigar shop when we take some down. Turning these into deviled eggs is an excellent idea. I think we'll try it this weekend.

  • What you've got to remember about Scotch Eggs is the sausage is a fairly solid thermal barrier so you'd have burned sausage long before you over cooked the egg in the frying/grilling process. I see so many people worry about over cooking the egg but I've honestly never had that happen after my first time making them when I over did the sausage layer. I do a 6.30 egg and deep fry and get a jammy yolk every single time. P.S. Evan is correct, cooking a few styles of egg is the first test I ever gave when doing a practical interview for a new cook.

  • Pop a hole on the bottom of the egg shell where the membrane bubble is. Boil it, ice bath and peel in the water. Perfect egg easy peel.

    • Interesting. I raise laying chickens and find that older eggs peel the best. So I make hard/soft boiled eggs from the old ones and poached eggs from the freshest ones.

  • Make them over coals all the time. We shoot for that lovely custard-like in between phase on the yolk. Once in a while we use chorizo sausage instead of regular to really make it dance. Do luscious a favour! Nice work B!

  • We make the same mayo recipe all the time as our goto, but we add some MSG. You really can not beat a fresh warm scotch egg, it is a classic here in the UK for a reason, most of the it I just add a pick of salt and pepper to the halved eggs, the yoke being all the sauce you need. If you have any leftover sausage meat make some sausage rolls, they are great while still warm from the oven with whatever sauce you like, ketchup or brown sauce hopefully HP sauce or at a pinch Daddies sauce being the classics, alot go for the sweet thai chilli garlic sauce or the ketchup based chili sauce now. Well looks like this weekend will be british old school classics here slow cooker beef stew with suet dumplings for saturday supper and rotisserie chicken for sunday lunch where already on the menu, now i want scotch eggs and herb sausage rolls ok ging all out pork pies as well. Maybe haggis if the butcher has sheep's stomach, that maybe special order atm not seen them since Burns night.   • Runny yolks is a sign of a fantastic Scotch egg! Similar to the large ravioli with a whole yolk sitting in a bed of ricotta. When you cut into it, if the yolk doesn't run, it is a fail.

  • Soak the eggs in hot sauce, mix crushed takis (a colorful type like green or blue) into the panko, and call them Dragon Eggs. Maybe spice up the sausage, too, and make the dipping sauce something a little fiery. I don't know if the color would come out, but it would be cool if it did.

  • I’ve got some questions about your deep fryer. Thanks I’m advance if you answer any of them! What’s it called (name / model)? How much oil does it hold? How long does the oil last on average? I know that this depends on what you’re cooking: fish vs. chicken vs. fries, etc, but I’d appreciate a guesstimate. That’s a lot of oil, so I assume that you have some ideas to stretch the 30 bucks or more worth of vegetable oil as far as possible. I’m sure that you filter your oil and you probably mix a little old oil in with the new when you do a complete changeout. Any tips, tricks or guidance in this are would be greatly appreciated.
