Ginger Scallion Noodles

Ingredients
1 tbsp soy sauce Light
1 tbsp soy sauce dark
1 tbsp rice vinegar or Mirin
2 Tbsp brown sugar
1 tbsp Korean Chilli oil
2 tbsp minced garlic
2 tbsp minced ginger
1 tbsp crushed red chili flakes
2 tbsp toasted sesame seeds
¾ cup of scallions thinly chopped
4 tbsp cooking oil (Used olive oil)
1 lb noodles of your choice (Using Rice noodles Sen Lek)
Garnish
Scallions for Garnish (Optional)
Preparation
1. In a pot, boil water for the noodles of your choice and cook/stir them for about 3 minutes and then continue to cook for an additional 2 minutes once floating at the top.
2. Add the following ingredients: scallions, ginger, garlic, sesame seeds, red chili flakes.
3. In a small saucepan, heat up approx 4 tbsp cooking oil.
4. Pour the hot oil over the mixture in the bowl.
5. Then add the remaining ingredients (soy sauce light, soy sauce dark, rice vinegar, brown sugar, Korean chili oil)
6. The last step is to add the cooked noodles to the bowl and mix everything together. Garnish the final dish with some scallions.
