Apples not only add a subtle flavor but they contain pectin which is a natural thickener. It’s used often in fruit pie making and canning for jams.
Looking to see if anyone knew this before I made a comment. Apple has the quickest releasing pectin of any other fruit I know. Citrus and berries take a very long time to extract, but apple is very quick. It’s also the second or third ingredient on S&B roux cubes from memory, after flour and vegetable fats.

Yep. consorting with pirates in any way is a critical offense in the Navy. If the kid were caught he'd be kicked out, or worse: court martialed.
One more reason Sanji didn't teach the kid it's because Sanji himself didn't experience any tutoring from Zeff. He's just trying to do the same

That is not the reason. Sanji couldn't care less about it, it's just the way he learnt to cook, so he does the same with this kid. Cooking with a recipe is easy, learning the skills to do it without is what's hard when you are a chef
He knows the kid knows how to do it, but he also knows that you learn best by figuring it out yourself so just being told "The heat is too high, you are gonna burn the onions" He might forget next time. Him remembering the lesson means he will remember next time too. You dont generally give someone the answers, you lead them to discover the answers themselves.

To give some context to why Sanji was all mysterious and didn't just tell the kid what to do, its because thats how he himself learnt how to cook at the restaurant he used to work at. He was around the same age as the kid, but the head chef didn't baby him and guide him step by step, in fact he rarely showed him himself how to do certain things, so Sanji was always observing him cook and bit by bit learned his secrets. This is actually something more common in real life then some people think, when it comes to cooking, you pick up skills by observing other chefs at work.

the reason Sanji didn't tell him anything is because he was testing the kid to see if he knew what he was doing wrong without actually telling him he was doing something wrong, Sanji is probably the best chef in the anime he has trained since he was younger than that kid that's how he knows so much, i think he saw some of himself in that kid so he wanted to helping him without actually telling him what he was doing wrong.
the reason Sanji helped him is because the kid said his dream was to find the All Blue, the same dream Sanji has and both were mocked by other chefs for believing it's real. Zeff saved and raised Sanji because he too shared the dream to find the All Blue.

When I was a bit younger, I was inspired by sanjis cooking, so I wanted to be a chef... I trained to be one even, but the place I trained at felt like a prison, so I ended up leaving. Idk if I even want to try again, I think i'd rather learn how to cook at home and maybe open a restaurant one day! My respect goes out to all the chefs out there, the dedication, discipline and will to keep learning and improving ones cooking is something I deeply admire. I will eventually be free from my current situation which restricts most of what I can freely do (talking about a private situation/problem i'm facing). When that day arrives, i'll be able to focus on my cooking and all other things I want to do right now, I can only imagine all the experiences I will make, for now, just the thought of what awaits me in the future makes me happy :D

Actually the apple is super correct, but they didn't show how to use it. Much like korean marinades use pear for sweetness, japanese curry (like vermont) use blended apples for the pectin to thicken the curry and the fructose to add a depth of sweetness and flavor. That's an easy way at the middle stages of cooking to introduce more flavor and get the consistency you're looking for if it isn't quite nappe.
This is very interesting as someone who grew up eating curry every day but this is so novel and alien to me

I like how Uncle Roger asks why the kid is sweating yet he completely ignores the entirety of the episode around it where the plot is this kid spilled Bishop's Curry that they were making for a competition between him and a few other captains so he's literally having to remake it for the sake of a competition.
not only that but the obvious thing is how working in a kitchen will make you sweat, you're physically active, in uniform, and everything there produces heat, stoves, pots, pans. I'm a former professional cook btw
The reason Sanji isn't giving the kid direct help is because Sanji is a Pirate, and the kid is a Marine. They're natural enemies, and Sanji ended up aboard the Marines ship. He wasn't obligated to help, but he wanted to. Love this episode.. and love the reaction!
Its not even so much that; Tajio wouldn't really have "learned" if Sanji was holding his hand the whole way. By letting him figure it out himself, Tajio TRULY learned through his own experience, with minimal direct help.

I always like the cooking scenes in One Piece I didn't know they were taking it so seriously, the fact that Uncle Roger could point out each of the spices was awesome. This is why One Piece is Goat piece and also definitely Sanji is Uncle Sanji now he definitely passed.

Context: the boy was so nervous because this was the first time the head chef allowed him to cook and he was going to cook for some high ranking marines
Yeah this was his promotion exam. If he does a good job with the curry he is another official cooking student. if it sucks, thats another 6 months or so as the dishwasher trying to learn by overhearing him instruct the others. He may still do dishes until a new kid comes along, but he will also be getting directly taught and expected to make food, prep ingredients, etc. Few years he will be on his own ship as the cook and be letting the dishwasher overhear him talking to his own assistants.
And i think he also Scuffed the curry in the first place
yogurt helps with tenderizing meat, by marinating it first they didn't need to cook it as long. It also means less flavor goes into the liquid, so the meat will be heartier.
I really like Sanji's approach to "teaching" this kid. He could've taught him the exact steps and methods to make a delicious curry, but the kid wouldn't have remembered it that way. By taking the hints and remembering what his head chef taught him, he figured out why certain steps have to be taken while preparing the recipe and how omitting them can change the final result. This is why I enjoy making recipes from cooking channels like Kenji or Adam Ragusea because they explain the food science behind their methods, and also offer you other options to achieve similar results. Anyone can copy a recipe, but it takes practice and experience to be able to improvise and adjust the recipe to your liking.
Despite Sanji is normally seen as a perv in the later episodes most of the time, there are a couple episodes where he genuinely cares for others especially with kids. Not only that, but he is also humble and eager to learn when it comes to cooking. Even though the episode is non canon, episode 319 was a really memorable episode to me

This kind of small story arc is what makes the older One Piece episodes shine compared to the newer ones. The newer episodes were great at their own, but the old ones hit different.

there aren't that many episodes where Sanji shows his cooking but the ones where he does are great, i know there is one in the East Blue saga where he enters a cooking competition for a fish that is not normally found in the East Blue (the world is split into 4 different oceans, 2 strips of ocean named the calm belt that separates North and South and the Grand Line and the New World which is in-between them). u should definitely watch that episode next.
The time he got into a competition with the entire cookstaff at a marine base and had to make food for 100 people was an excellent episode about the philosophy of cooking and what it means to cook for an entire base rather than for yourself or your family. THAT was an excellent set of scenes.

As a Japanese person, I can confidently say that this is true. The Navy is isolated and has to cook with limited ingredients. The reason is simple: curry allows you to cook parts of vegetables that you would normally discard, such as their skins. It was also praised for being able to change the ingredients, for being highly nutritious, and for going well with rice. Calais was chosen as a way to mark Friday each week, as the sense of dates becomes vague at sea, as is the case with submariners.

Sanji didn’t hint to the young cook directly because he’s a pirate, and the cook is from the marines. He knows that if he helps the kid openly he could get the kid in trouble
I figured it was more because he wanted him to feel like he did everything himself.
Nah the kid was nervous and was going to make mistakes because of it. Sanji dropped hints because he was confident the kid knew what he was doing and didn't want to just hand him the answer he wouldn't have learned anything that way.

For some context, I believe the Marine in training kid had dropped a big pot of curry and some IMPORTANT guests were waiting on it, that's why Sanji was helping but not directly, as Sanji is a pirate and not even supposed to be there. The kid was stressing tf out cuz it had to be PERFECT of course.
Uncle Roger may be pleased to know that Sanji (the tall, handsome chef) is not only an excellent chef, but an excellent fighter too! But, because Sanji is such a good chef, he never fights using his hands, because a chef's hands must always be clean and in good shape, so he only fights using kicks! Except for that one time where he fought against an enemy that could transform into a noodle monster, and because he was technically food, he fought him with knives and proved that he is also an excellent swordsman. Chefs can do anything!

Wasn’t this from a filler episode? And for those who dont watch the show, Sanji, the man the the black suit, is a Chef for the main cast, he worked as an actual cook prior to becoming a Pirate (he still cooks all the time though, when he’s not chasing the ladies or fighting) And for further context, the ginger chef is basically an intern. Due to circumstances he’s cooking for some of the higher ranking officials. So yeah, that and the kitchen heat would make anyone sweat

God this episode takes me back. It's little filler episodes like this, (and the g8 arc) that makes the anime worth taking a look at as a reader of the manga.
Considering this was just after Alabasta, little standalone episodes like this were necessary. Though usually when they have a small battery of standalone episodes like this it's always Sanji who gets the best ones.

6:06 Sanji ("the blond handsome guy") leaves hints for the "ugly ginger kid" because it is more effective to learn by yourself than it is if you are told what to do directly. If you learn by always being told what to do, you subconsciously get used to it and always expect answer to be given to you.

Indonesian Curry surely different compared to Japanese and Indian. We use coconut milk and chicken meat here, the turmeric made the colour yellowish here but not as thick and probably lighter, sometimes we filled it with Potato, but most of the time just Tofu and or Tempe
That’s more how curry is made around the world, this in the anime is a blend of Japanese and Indian curry cus Indian curry isn’t a thick gravy consistency like shown here which is how Japanese one is made.

This was a great episode. Sanji san shows respect for the kid in the kitchen. We all know he might chase the ladies and mess around but not when it comes to cooking!

Sanji's one of the best cooks out in anime, he takes his work very seriously! Recommend more of his cooking but there's over 1000 episodes now of this anime and I just got into it recently halfway there almost to 400

This One Piece episode really motivated me to cook and solidified my love for Japanese Curry. Had to go through many trials and errors to perfect it but I was able to get the hang of it and it was worth it. I even use the same curry sauce for Curry Katsu 😋
