How To Cook Sausages - Boil n Burn Method - Super Results - Sausage Recipe - For years i have been cooking my sausages all wrong, burning them on the outside to ensure the middle is cooked and pocking the life out of them, which is a big no no. This method that i call boil n burn works a treat every time. Give it a go. Methods of cooking perfect sausages Boiling first This method is one of my favourites as it helps seal all the moisture and flavour in. As well as water you could boil in beer (this was a particular favourite of ours when testing the methods.) as the ale really does add an extra depth to the flavour. Put your beer or water on and bring to the boil. Then reduce to a simmer and put the sausages in, making sure they are covered. Check with the probe after about 10-11 minutes. Once at 75oc remove and fry or grill on a high heat very quickly until brown. Oven cooking I never used to like sausages cooked in the oven until I started putting water with them. Place a small amount of water in an oven dish and then put sausages on a resting rack. Place the rack with sausages in the oven dish. The water should not be touching the sausages. It is just there to help steam while cooking. Cook on about 160oc (fan assisted oven) for 15-20 minutes and then check to see if at 75oc. If not brown you can always increase the temperature for a couple of minutes. Frying This will give a more greasy sausage but one with great flavour. With frying it’s all about being gentle. Put a very small amount of oil in the pan or with a good non stick pan you can cook without. A little fat should come out of the sausages to cook them in, but not too much. If the pan ends up full of fat and water they are not great sausages. Remember, life’s to short to eat cheap sausages! I cook mine on a medium heat turning occasionally for 22 minutes. When probed they were perfect! Grilling Grilling is a good way if you like the skins crisp. Again don’t cook on a high heat and only turn occasionally, probing after 15 minutes. Never prick a real sausage When cooking a ‘real’ sausage you should never prick it. It was common to prick sausages due to the bad state of the industry after the Second World War. As a result of rations sausages were full of bread and water to the point, where they would expand and explode when cooked, hence the name ‘bangers.’ Unfortunately after the war butchers saw it as a way to maximise profits, and kept the low meat content. I would boil the sausages in a good, dark British porter and make a gravy with it, then brown the sausages with caramalising onions, and finally, mash some potatoes with an entire stick of butter (Le beurre, c'est ton ami!), and voilà! A British pub classic!
Rule 1: boil them for 6-7 min Rule 2: dry them up Rule 3: cook them for 5-6 min Rule 4: enjoy
Any pork product had to be cooked thoroughly. I cook mine at least 15 minutes.

I'm an American but I was living in Colchester around 2000. I found some sausages at Tesco labeled "Lincolnshire" that I absolutely fell in love with. After burning a few just frying, I fell on this technique that I still use today for any encased sausage. Back in the US, I have never found anything quite like those Lincolnshires, but I keep looking,,, Thanks for positng this!
As a brit living in the United States, I really miss british sausages. Johnsonville do the brown and boil method to cook. There are places where they do british style sausages, not sure about Lincolnshire sausages, but you're not alone in missing them.
I didn't know this for years about sausage until I read the cooking directions on a package of different brand of link sausage that I had never tried before. It gets the middle up to temperature on all types of sausage. Thanks for pointing this out for those that didn't know this trick.
This is the way my late Mother used to cook thick pork snags for us. She was a fantastic cook, as was her mother. I loved cooking, & attended 100’s of cooking classes’, as I enjoyed it so much. Once Microwave Ovens’ became popular in the early ‘80’s, I attended every cooking course I could, to the extent I was asked to be a teacher of m/w prepared food! My son is a Sous Chef, with Patisserie Quals, so the cooking continues!
When I was a younger husband, my wife sent me to an ancient butcher shop, the old Italian guy made , what my wife said was the best sausage ever. I bought what I needed, and the owner looked at me, "how you going to cook those?" Barbeque, I answered, "What!!!! who told you that was how to cook them?" the old man said. I followed his instruction, and have for almost 40 years since that day. I steam the sausage first, then Barbeque or fry (or add to sauce) . Always fully cooked, never burned. Boiling is OK, but steaming is quicker and the old man told me to do it that way (forever).

Must admit I do my sausage in the air fryer but before I used to cook the outside as I liked them then cut the length ways to cook the inside…will try this method but put them in the air fryer because it browns them all around. Thank you for this method.

This method is THE only way to cook bangers straight from the freezer. I put them in a little water with a chilli and a bay leaf then when the water has evaporated and the pan has nought but a little rendered out lard in it remove the flavourers and add a tablespoon of oil, nothing fancy just basic rapeseed oil, and bring to a nice sizzle and turn and brown to finish. Never fails me, my bangers never split and the middles are firm but juicy. If you do them in a traditional English ale (Newcastle Brown should be available in Canada, that'll do the job) and slowly reduce the beer to a syrup before adding some sliced onions, a couple of bay leaves and when the onions are done you'll have the perfect base for a fantastic onion gravy for the ultimate Bangers 'n' Mash.
This has always made a huge amount of sense. You can upscale this with a whole chicken in a slow cooker and then 10-15 minutes in an oven. Same theory. It's not only a no brainer, it's great

I've been doing this with rolled pork sausage for years. I put the sausage in a pan and put water about half way up the sausage. Cook medium flipping several times until the water is gone then continue until they are browned perfectly. Simple, quick, good.

I’ve usually done something similar. Instead of water, use beer (newkie brown!) but only to halfway up the snags. Turn them around while cooking. When most of the liquid has evaporated and all you have in the pan is a thicker syrupy liquid, add onions. Sausages will have cooked at this point. The onions will soak up the flavours from the pan and the sugars in the beer, sausages will start to brown. Really great start for an onion gravy along with the snags!
You just dropped some good advice. IMO, using beer to merely poach the sausages doesn't impart any flavor that I could detect, but your method of reduction and using beer as a base flavor for an onion type gravy would make for a great sauce with the snags, and the mash that go with the bangers....

I'm now 72. As a kid, I was in the cubs, then scouts and so on. The sausage sizzle was an integral part of our survival training program! We were always taught to boil the snags first, otherwise they would explode into a gooey mess. Little tips like this got me through those pioneering years!!
You must be an Aussie. Even though I'm a 62y.o. youngster that's how I was taught to cook them when I was a kid. I also remember that if we having a party and buying quite a few sausages our local butcher would par boil them for you.

I’m a bit younger at 59 and I’m from Britain. If I’m not mistaken the reason that would explode in former times….and the reason they were called “Bangers” in Britain and elsewhere…is due to the excess amounts of non-meat fillers and water that sausages used to contain when meat was scarcer. Hence better to partially cook them by boiling or prick the skins.

Yep, American sausages contain up to 70 % water so they will explode. Explains the 0 taste too.
My mother in law taught me this 60 years ago and I've done it ever since. When the children were still at home I would boil up a saucepan full of sausages and put those we didn't use on a plate in the frig covered in foil. They kept for longer when pre cooked than when fresh.

I have never boiled a brat in my life and have never had them raw in the middle. Even only using a grill I have never had raw in the middle and burnt on the outside. Low heat slow cook on a grill equal amazing flavor and juicy brat or sausage. Seem counter productive to boil them which remove fat and flavor then to cook them in oil when on the grill you utilize the natural fat in the sausage for flavor and juiciness.
FINALLY!!! A bratwurst cooked the right way! Simple, direct, delicious! Every "chef" in the world believes they have some super secret method or ingredient to create the most heavenly brat on the planet, when in fact if you choose a quality sausage and boil it done, then brown the outside with a hot skillet it's as good as it gets! Great job!
I love brats... But to call them a quality sausage, I have to disagree. Its probably one of the lowest quality sausages out there, from a meat/processed point of view. I mean just smell your farts after a bratwurst..... Holy hell. lol

Learned this 50+ years ago when I migrated to Australia. When using thick sausages for a BBQ it was standard practice to pre cook by boiling to prevent burning and overlooking the outside when on the grill...
Works great for county style ribs before grilling too.

My Dad always put in enough water to boil them, and then the water would naturally cook off, and leave the pan dry, and then he'd pour oil in, he never had to remove the sausages, dump out the water etc..

Was taught this method for preparing chicken/ bratwurst for barbecuing also using a microwave on low power work as well. Do minutes intervals and monitor and can barbecue after microwave process or fry......
I've cooked mine for years but grill them after boiling ,then put them in a pan of tomatoes for awhile and then eat with crusty bread 🍞

I always do the same. They lose a lot of taste if you throw the fat in the water away. I boil them down till there’s nothing but lard and it cooks in that.

LOL, I was taught to steam them, covered, in the pan on low then remove lid, boil off any remaining water and brown. It takes a few times to judge the water quantity but the results are great :)

Living here in Spain I missed having English style sausages until a few months ago when I found out about a place in Fuengirola that sells all types of sausages etc online. Since then I've had them every other night, burnt to s crisp and black💗. I'm going to try this method next time!

That is also a method that works. The result is exactly the same as this video, the order is just reversed, but the result is the same.
@@shaunjayes8842 Gave this othe method a try with some Brats, after boiling them I tossed them on the BBQ for a couple minutes to get a little char on them, worked good.
Doing it this way, washes off all the nicely browned outside flavor.

You will live to a ripe old age. Views and studies are changing with research. A high fat 70% diet, 5% carbs and 25 % protein is the latest. Completely opposite to what all have been taught and believe. If your fat, your weight will fall off you rapidly without exercise.

I spent a long time in Australia where local butchers competed to make the best sausages they could possibly make, as a result I have tasted some awesome sausages, but don't go to the supermarket, get to the local butchers, well worth it for great ingredients, I really miss those sausages!

I've been doing them that way for a very long time. My mom always did them that way and they always came out juicy inside with that good 'snap' when biting into them. I changed it up a bit, I like boiling them first and throwing them on a grill for that added smoky, grilled flavor. the skins may split a little but I don't care, the flavor is worth it.

I've always cooked Sausages this way! It also makes the skin a bit crisper and the inside really moist.
Excellent method...!! I cook my snags internally with the microwave first before browning. Also, really dense sausages can be 'butterflied' by cutting them end to end.. Internal heating/cooling befare browning is excellent advice.. Cheers.

@@loganshooter5331 Not really, your method produces a good sausage, but it is not as "juicy" (fat/water bound up in cellular tissue) as with this method.
I saw a cook use this method years ago. He also slid each sausage onto a skewer before frying to keep them nice and straight which resulted in a nice even golden brown colour all around each sausage 👍

I do something similar but I love the sear you get from a cast-iron skillet. After I get rid of the boiling water I put in a bit of bacon fat in the cast-iron skillet. Not too much and then sear on both sides.

I used to take about 5-10 minutes to "cook" sausage.... then a mate moved in and every Sunday he cooked us a full English - and he REALLY took his time. It took hours, and it was..... perfect - every time. I learned that fried food is not fast food. As the song goes "Slow and Low, that is the Tempo" etc. Yeah, step back, take your time, much better results. To be clear, I would knock out a fried breakfast in 12-20 minutes and think that was fine. This guy took 2-3 hours, or 4 on a good day... Same dish, VERY different results. If you're not hungry there and then - take your time, cook everything sloooooooow!
My mother, a chef, always cooked sausages like this but she added salt to the boiling water and cooked them to brown in a hot oven. Her sausages were always so succulent ❤
In the northeast U.S. these are almost always served in a hotdog roll with peppers and onions!

Thank you so much for posting this video about a quick and simple and ingenious way to cook meat sausages. I live in a small one bedroom apartment in south Florida and I have an older oven. Watching your video has helped me to learn a new method to make sausages. I am spending less time cooking and washing dishes and the pan. This makes it easier and safer to fry them. I hope they will taste better too. I know they are healthier for me to make them this way. There is less oil and less of a chance of being undercooked. Thanks for the tips! This is by far the best and actually ONLY method
I am about to try this out. So far, whenever I grill or fry them, I always end up with uneven colouring and usually blackened strips on one side. This looks like the turning point!

Used a similar recipe for Bratwurst last night. Cooked in beer, onions and bay leaf, then dredged in flour mixed with salt and pepper. Back in the pan with some oil. Turned out surprisingly well: a brown crust and juicy insides!

Never thought about cooking them hot water, first. A jolly good tip!
I have been using a heavy skillet for this method. I place the sausages in a cold skillet, fill with water to just cover them and boil until the water has all evaporated. Leave them in the skillet and add about 1/8 inch of oil and brown to the desired color. During the last few minutes, I add onions rings and peppers, garlic, and a dash of any good Worcestershire sauce. Cook until the onions are translucent and the peppers wilt slightly. Delicious... enjoy.

Lee & Perrin's is the only true Worcestershire sauce (they invented the stuff, by accident as it happens), just use that and your taste buds will thank you. It's made from fermented anchovies and spices so it's naturally loaded with MSG which means a splash in any savoury sauce will increase it's tastiness automatically.
I like to steam them first then broil. I'll continue to steam, but I think I'll try the pan fry in oil. Just the cracklin' sound make it look good. Louisiana hot links or Italian sweet sausage. Saute some onion and bell peppers lightly and put them on a roll with mustard.
