    • This place was doing this food in the early 2000's so I think the trend of increasingly authentic Mexican food in the US was still in its earliest days. In that way, I think this was ahead of its time, but, if we are honest, this is certainly more authentic than most other Mexican restaurants in Cleveland at that time but more an interpretation of Mexican food than actually authentic. Not surprised that the Hispanic people in Cleveland were going to other places.

    • Doubts that. No walk-in coolers doesn't mean they don't have any refrigeration units. Eggs, milk, cream, cheese, and all other forms of diary products require refrigeration units no matter what they're claiming.

    • The owner/chef mentions using a refrigerator for some ingredients that require it, about halfway through the video. But they don't make anything in advance to store in coolers.

  • Guacamole tradicional doesn't have garlic....it's made simple with tomatoes, onions, jalapeños or (where I'm from) curranos...salt to taste

    • And? Everyone cooks differently. Some people like garlic. People get so offended when others don’t cook exactly the way they do. 😂 it’s food. People eat what they want. Dumb people get mad about what other people prefer. I put garlic in my guacamole. And I sell about 30 gallons every week. 🤷‍♂️ As long as you using fresh ingredients. I see nothing wrong with different variations.

    • @@NA-se9fr I stay in Mexico every summer. I know lots of people who put garlic in. So are those people not authentic? Just bc your family fiend do something doesn’t mean it isn’t traditional for another Mexican family. My point being is one family doesn’t create the curb for authentic. If it’s fresh and uses similar ingredients and techniques then it too becomes authentic. 🤷‍♂️ people should get over themselves and the pride they have for simple differences. This guy is celebrating your culture, and all you can do is say “ ohhh. But it’s not authentic enough, blah blah blah.” At least he probably washed his hands. Wish I could say the same for the other Mexican establishments. 🤷‍♂️😂

Y’all have a history of appropriation, so it’s not surprising. Yes, variations of guacamole exist but the recipes stem from Mexico. This one does NOT, Billie. We do not need YOU ALL to celebrate our culture. We do that perfectly fine on our own. LOL. And then for you to say it’s okay for someone not from the culture to label this as authentic Mexican food (which does not stem from Mexico) then on the other hand call authentic restaurants dirty…just say your shit is unseasoned and move on! 🤭 If you need references, ask!

  • In this video there are actually not to many MEXICAN PEOPLE in HAWAII, but in NYC, there are a lot of MEXICAN people spread out, and I enjoy MEXICAN food, and it's not expensive, very affordable and they take pride in their food and because they are from MEXICO, they want to come here, either in CALIFORNIA, ILLINOIS, FLORIDA, AND NEW YORK CITY, and it's not expensive, good eating and sometimes I will ask for the recipe, which they don't mind and I am the same way as I have taught, MEXICAN PEOPLE, International food, and it doesn't bother me as I have a lot of different recipes, it's only food

  • Impossible, I don't believe they don't have a walk in or a freezer. The health department would shut them down if they didn't have a way to keep things cold. I will be going there in 2 weeks as I only live 45 min away and see that, they don't have a walk in SMH

  • Finally a cook that knows the difference between JUS and AU JUS! Jus is the sauce, gravy or liquid remaining. Au jus is when yo uptake a protein and ADD the jus to the protein (I.e a steak Au jus is a steak that has the jus added to it. You do not add AU JUS to an item. You add JUS and the dish becomes XYZ Au jus!, capiche, compreendes, comprendes?
