✅ Make the seasoning
Chicken 2 kilograms
1 teaspoon black pepper
2 teaspoon salt
1 teaspoon coriander
1 teaspoon paprika
2 tablespoons pomegranate molasses
2 tablespoons soy sauce
3 tablespoons oil
1 tablespoon tomato paste
1 tablespoon oil
A sprinkle of sesame
✅ Making rice
1 cube of butter
1 tablespoon oil
Cardamom 5 pcs
1 tablespoon coriander
1 cinnamon stick
1 piece of lime
1 onion, small cubes
½ pepper, small cubes
½ cup raisins
3 cups basmati rice, washed only
Salt, to taste
Boiling water at a rate of 1½ cups per cup of rice
✅ Make the saffron mixture
1 teaspoon of saffron yolk
¼ cup hot water

The marinade process begins by mixing the following ingredients in a bowl:
1 teaspoon black pepper.
2 teaspoons of salt.
1 teaspoon of coriander.
1 teaspoon of paprika.
Stir the ingredients well until completely mixed.
🔰 Then marinate a chicken with the marinade you prepared previously. You may need to increase the amount of marinade if you want to increase the amount of chicken.
🔰 After seasoning, add the following ingredients to the chicken:
2 tablespoons of pomegranate molasses.
2 tablespoons of soy sauce.
3 tablespoons of oil.
1 tablespoon of tomato paste.
🔰 Season the chicken well using your hands to ensure good coverage of the marinade on the chicken. You can also put some of the marinade under the chicken skin to add extra flavour. Cover the chicken with parchment paper and then thermal paper.

3. Add the chopped onion cubes to the pot and stir for two minutes until the onion becomes translucent and slightly browned.
4. Add the diced peppers and raisins to the bowl and stir for an additional two minutes until the peppers wilt and the raisins swell slightly.
5. Add the washed, dried rice to the bowl and stir for a minute until it is coated with the spices and raisins.
6. Add salt as desired and add a cup and a half of boiling water to each cup of rice.
7. Cover the pot and leave it on medium heat until the rice dries. This may take about 15-20 minutes.
8. At the final preparation time, mix a teaspoon of saffron yolk with a quarter cup of hot water and mix well.
9. Open the bowl and add the saffron to the surface of the rice and distribute it evenly.
10. Cover the pot again and leave it on low heat for another 10-15 minutes until the rice is completely cooked and the smell of saffron spreads.
11. Next, remove the pot from the heat and leave it covered for 5 minutes before serving.
12. Place a piece of thermal paper in the chicken dish, place a piece of charcoal on top of it, and a little oil to add the charcoal flavor to the chicken.
13. Serve delicious rice with grilled chicken pieces on the side.
