Can't touch the pan after adding water. If you do. Get a brush and dip it in water and brush the sides to not form a crystal otherwise it will. Learned that lesson in baking school.

Take a small spoonful of the sugar water that you are cooking and dump it into the glass of ice water. When you pull it out, it should be crispy when you bite it, not sticky. If it is sticky, cook the sugar water longer.

you need to add at least a quarter cup of corn syrup and then leave the pan alone while its heating. the corn syrup help the sugars stay in liquid form rather than crystalized form.

Try adding corn syrup to sugar and water mixture when boiling to prevent crystalisation and you have a few more seconds to coat fruit of your choice.

Your sugar had already crystalized before you had dipped the fruit. Once it does that you cant save it. Also was your pan non-stick?

You have to boil the sugar and water until it turns like a golden yellow (takes around 15-20mins) and then dip the fruit in. Then dip them in the ice bath! I would use like a medium heat setting

I tried tonghulu in one country and it was too thick that it was getting stuck onto my teeth. I thought that was how it was, but then I went to Japan and tried it again and omg! The candy part was super thin that it just cracks and easily to chew and the fruits were so yummy.
