DIY Nakiri knife - Nitro V steel - 61HRC

This time I'll show you how I made a traditional vegetable knife - a Nakri.
The steel called Nitro V was used for the knife blade. Nitro-V steel is a high carbon stainless with the addition of nitrogen and vanadium.
The video also shows the hardening, quenching, freezing treatment and tempering of this martensitic steel.
For the handle I used olive wood and brass.
The wood is glued on and additionally fixed with brass pins.
The blade is 165mm long, 2.75mm thick and has been given a hammered, unique look.
