🇺🇸RED BOUDIN SAUSAGE: Load the massive cooking pot with cut up pork and water. Cook overnight. Debone and grind the pork. Season the pork to taste and cook. Add rice and pigs blood to the mixture. Stuff mixture into the sausage casing and then link the sausages. Poach to cook the blood.

🇺🇸 CRACKLINS: Fry pork skin and fat into small pieces.
🇺🇸 FROG LEGS & DIPPING SAUCE: Remove the skin from the frog legs and clean them using water. In a large bowl, mix cornmeal, flour, onion powder, granulated garlic and Cajun seasoning. Place the frog legs in the mixture, completely covering them. In a frying pan, add a bit of olive oil. Place the frog legs into the oil and allow to cook for 5 minutes on each side. For the dipping sauce, mix mayonnaise, ketchup, onion powder, granulated garlic and worcestershire.

  • I remember when I was 7 years old and walked into Mr Lester's place with 2 dollars and walked home with enough meat to feed our family of 9 for 2 days. Mr Clive would always do us right. Great memories of this place and glad to see it thriving still today. People can make fun of us cajun's but we know how to cook good food and appreciate what we had and still work toward, the next great meal! Oh, that walked happened 68 years ago and I still visit the same building for the best hog head cheese anywhere!!!

    • Wow!! I'm in texas and have had a hard time finding good homemade hog head cheese for the past 5 years. My granny who comes from Louisiana use to make it before she passed so the grocery store kind in the freezer doesn't taste the same. She'd buy a whole hog head from the Fiesta in Houston. It was so good and tender. The memories are sweet

    • Right! And this is the way the best food in the world is created by resourceful imaginitive people working with what they had and trying to make it tasty. From Texas Barbecue (brisket, tough and hardly edible also think Jewish corned beef), Scottish Haggis (sheep stomach), Mexican Fajitas (made from the cow's tough diaphragm muscle), Cajun Blackened Red Fish (a "trash" fish now highly sought after). And let's not forget my English mother's braised cow heart my favorite dinner as a child. Ethnic food is the most colorful and the best.

    • @@vivekbernard FB coin does not need a blockchain, and is no threat to bitcoin and other cryptocurrencies. Like stated before, its paypal on facebook suite of apps. What it actually is competing against is banks (retail and central), which is interesting. If people choose to put their fiat currencies into this fb coin, and then consume these coins in purchases etc, what it means is the banks are getting their legs cut out under them. No longer are these people holding all their savings in their bank account. Now the banks have less of our money to lend out to others (fractional reserve lending). No longer are these people spending and transacting their fiat currencies, banks and payment merchants don't get the transaction fees they usually get. The only function the banks have in this process is holding the fiat which eventually gets turned to the fb coin, or banks that hold fiat that act as a security for the coins (ie that the libra foundation holds) It will be interesting to see how regulators and banks react now, they must be scared As for Bitcoin, this is great for it, it's re-opening the conversation about money, finance, and how governments and central banks have constantly screwed up our money system. As people take steps to participate in the libra ecosystem, they will also start looking into Bitcoin, and realize the advantages it has over everything else (including Libra), as a 100% trustless and secure store of value and value transfer. sellected writes... My opinion is crypto for day to day currency is stone cold dead. It had 10.. whole... years to figure something out and failed. Facebook & co have obviously been watching and learning from others mistakes for a year or two 99% of crypto projects are useless, so I guess you could say crypto is dead yes (doesn't mean you can't make money off it atm though). But the underlying technology of crypto and its use in real world applications is just getting started. This is where the real value is. Smart Contracts will transform the way many businesses and industries operate

  • When he's stuffing the casing it reminded me when I was 16 and making sausage with the local butcher as a part time job ( Illegal in NJ now and then lol ) he let me give stuffing the casing from the grinder a try and it's a art I never mastered. Loved seeing it !

  • I live about 6-7 miles and 10 minutes from Bourgeois meat market, and I can vouch for their quality. Their smoked green sausage is extremely tasty, very smoky, and rich, and ALMOST, but not quite too rich for me, and I like rich food. It's perfect for gumbo and jambalaya. But their beef jerky...WOW...if they wanted the headaches, they could go nationwide, and be one of the top sellers. The only draw back is that they don't offer any other kind but straight up jerky. No teriyaki, peppercorn, etc. They also sell crawfish boudin during crawfish season, and I've heard that it's awesome, but I walked in one day and saw the price and said....NOPE, not this Cajun !
