🇺🇸 FROG LEGS & DIPPING SAUCE: Remove the skin from the frog legs and clean them using water. In a large bowl, mix cornmeal, flour, onion powder, granulated garlic and Cajun seasoning. Place the frog legs in the mixture, completely covering them. In a frying pan, add a bit of olive oil. Place the frog legs into the oil and allow to cook for 5 minutes on each side. For the dipping sauce, mix mayonnaise, ketchup, onion powder, granulated garlic and worcestershire.

I remember when I was 7 years old and walked into Mr Lester's place with 2 dollars and walked home with enough meat to feed our family of 9 for 2 days. Mr Clive would always do us right. Great memories of this place and glad to see it thriving still today. People can make fun of us cajun's but we know how to cook good food and appreciate what we had and still work toward, the next great meal! Oh, that walked happened 68 years ago and I still visit the same building for the best hog head cheese anywhere!!!

Wow!! I'm in texas and have had a hard time finding good homemade hog head cheese for the past 5 years. My granny who comes from Louisiana use to make it before she passed so the grocery store kind in the freezer doesn't taste the same. She'd buy a whole hog head from the Fiesta in Houston. It was so good and tender. The memories are sweet

The Majority of Cajun fun and “Soul food” where literally invented based on the premise of “Doing the best you can with the scrap you are givin” or making something out of nothing.
Right! And this is the way the best food in the world is created by resourceful imaginitive people working with what they had and trying to make it tasty. From Texas Barbecue (brisket, tough and hardly edible also think Jewish corned beef), Scottish Haggis (sheep stomach), Mexican Fajitas (made from the cow's tough diaphragm muscle), Cajun Blackened Red Fish (a "trash" fish now highly sought after). And let's not forget my English mother's braised cow heart my favorite dinner as a child. Ethnic food is the most colorful and the best.

Boudin is a word still used in french, also in France we use crumb bread (the white part of the bread) instead of rice to make boudin. I wish to travel to Louisiana one day and try all the great food of this beautifull state. :)

What it actually is competing against is banks (retail and central), which is interesting. When he's stuffing the casing it reminded me when I was 16 and making sausage with the local butcher as a part time job ( Illegal in NJ now and then lol ) he let me give stuffing the casing from the grinder a try and it's a art I never mastered. Loved seeing it !

I live about 6-7 miles and 10 minutes from Bourgeois meat market, and I can vouch for their quality. Their smoked green sausage is extremely tasty, very smoky, and rich, and ALMOST, but not quite too rich for me, and I like rich food. It's perfect for gumbo and jambalaya. But their beef jerky...WOW...if they wanted the headaches, they could go nationwide, and be one of the top sellers. The only draw back is that they don't offer any other kind but straight up jerky. No teriyaki, peppercorn, etc. They also sell crawfish boudin during crawfish season, and I've heard that it's awesome, but I walked in one day and saw the price and said....NOPE, not this Cajun !
I remember trying frog legs and it's probably one of the few things I know where when they say "It tastes just like chicken!" they actually mean it.
