  • It's not a Salmon, it's a farmed Norwegian Trout (Fjord Trout). Salmon Trout is not exactly Salmon and it comes from Trout family. However, It is very similar to Salmon. It should be called “Fjord Trout”. Norwegian Fjord Trout is raised in the pure and cold Norwegian Fjord where seawater and fresh water from the glaciers meet, and therefore gains a rich taste and a pure aftertaste.

  • 8:30　ラジオペンチ類の工具で小骨を抜き取る作業の処、鮮やかな手捌きに惚れ惚れしますね。日本なら腕の良い料理人が毛抜きを使って仕込をして居る姿ですね。 そう言えば今御家庭の調理器具で毛抜を常備されて居る方はどれ位居るんでしょうか？御家庭の奥様方が丸ごとの魚を捌く事が出来なくなって随分時間が経った様な気がします。ケーキを作ったり、クッキーを焼いたり、果てはバレンタインデーのチョコレートを手作りしたりと、洋菓子作りには大層お金と時間を掛けて修練に励まれて居るお嬢様方や奥様方は沢山居られる様ですが。魚を捌く術を身に付ける事も日本人の常識として貰いたいと希望するのは、矢張り団塊世代前後の化石爺いが想うたわ言なんでしょうか。昭和は遠くなりました･･･。
