I made my moist LEMON CAKE recipe even better! Soft, zesty lemon cake with lemon curd
This lemon cake recipe is literally the best I've had! With delicate, moist lemon cake layers, filled with a zesty lemon curd and topped with a super delicious cream cheese frosting, you'll be going back for seconds (and maybe even thirds!). This recipe is an updated version of my original lemon cake recipe.

INGREDIENTS:
🔹Lemon Cake
▢2 cups (240 g) flour - regular, all purpose
▢¼ cup (30 g) cornstarch
▢2½ tsp baking powder
▢½ tsp salt
▢¾ cup (170 g) unsalted butter - room temperature
▢¼ cup (60 g) unflavoured vegetable oil - I use canola oil
▢1½ cups (300 g) white granulated sugar
▢3 tbsp lemon zest - see note 1
▢4 large eggs - room temperature
▢⅓ cup (90 g) milk - room temperature
▢½ cup (115 g) yoghurt - unflavored and unsweetened. Greek yoghurt okay but regular type preferred.
▢¼ cup (58 g) fresh lemon juice
🔹Lemon Curd
▢1 tbsp lemon zest
▢¾ cup (184 g) fresh lemon juice - about 5 lemons
▢¾ cup (150 g) sugar
▢¼ cup (30 g) cornstarch
▢¾ cup (175 g) milk
▢½ tsp vanilla essence/extract
▢½ cup (113 g) unsalted butter - cold and cut in cubes
▢1 drop (1 drop) yellow gel colour or pinch of turmeric - OPTIONAL
🔹Cream Cheese Frosting
▢1 cup (225 g) unsalted butter - room temp
▢4½ cups (570 g) powdered sugar - also known as confectioners/icing sugar. Use more for a thicker frosting (see note 1)
▢1½ cups (335 g) cream cheese - cold, firm type (see note 2)
▢1½ tsp vanilla essence/extract
▢1½ tbsp lemon juice - must be fresh

Sorry I’m making this comment on your wonderful new video which was awesome per usual!❤ no I made your homemade cake release recently and I did equal parts, butter, oil and flour and I don’t know what I did wrong but my cake ended up with a crispy outer crust along the edge. If you have any advice on this, I would really appreciate it and also for chocolate cake or any chocolate bake, usually use butter and cocoa powder to treat my pans so I don’t end up with white flower all over my chocolate bacon. Would I be able to make a chocolate cake release using the same recipe?
Heya! :D No need to apologise at all! This can happen if there is too much of the cake release used, so maybe try reducing the amount and hopefully this helps :) In terms of a chocolate cake release, I haven't tried that myself so I'm really not too sure sorry! When I use the cake release with my chocolate cakes I find that it doesn't leave a white residue as there isn't any loose/dry flour (if that makes sense) :)

You're so welcome! :D And hmmm this could be due to the type of sprinkles used. You want to try and use very bright colored sprinkles and ones that are relatively firm (usually the cheap artificial colored ones are best to use as opposed to ones that use natural color) :) Hope that helps!

Thank you!! :D I haven't tried buttermilk as a substitute myself, but the yoghurt does add a lot of flavor so I would probably suggest sticking to the yoghurt if possible :) Enjoy!

I’ve done several of your recipes and they turned out great. I am new to baking. I had a problem and I like if you could possibly explain what I did wrong. After I cooked the lemon curd. I let it set. Then I did the butter icing. When I put the icing on the first layer. I used the piping bag to crest a small edge to keep the lemon curd from dripping over the edges but the top layer was sliding off the bottom cake. Was a mess. The lemon curd didn’t stiffen And maybe I used to much icing and lemon curd on the first cake. Not sure. Taste good but the top cake was sliding off the bottom cake. After in the fridge for a couple hours it was good and the lemon curd did stiffen up. Thankyou for your time. Thankyou
Hi Chris! :) So happy to hear you're enjoying the recipes :D In terms of the cakes sliding, this can happen when too much lemon curd is placed in the centre, or the piped dam around the edge isn't high enough. It used to happen to me all the time so you are not alone! What you want to try and do is make the dam around the edges higher than the lemon curd, so that when the second cake layer is placed on top, the edges are resting on the buttercream as opposed to the lemon curd. In terms of the lemon curd not stiffening, you may need to add a little more cornstarch, or pop the lemon curd into the fridge while you're making the rest of the cake as this will help it become more firm and therefore it's less likely to cause sliding when used on the cake. Hope that helps for next time :)

Haha that's totally fine! If you find that the original recipe doesn't cave in on you and bakes up well then you can totally stick to the original recipe :D it has more lemon flavor but a more delicate structure so the updated version just has a bit more structure :) Hope your sis loved it! :D

Hey! I always follow your recipes.. Last time I made your lemon curd.. Using milk.. It was little grainy.. Is that normal texture? Or should I try straining that?
Hi there! Thank you so much for trusting my recipes :D. For the lemon curd, it should end up smooth. This could be due to not cooking the lemon curd enough (initially the mixture is grainy but should become smooth once the cornstarch is activated by heat) or not putting in enough cornstarch :) It's important not to overcook the lemon curd too, so what I would recommend is letting it thicken up over a medium heat, and if its still curdled once hot, then add in a bit more cornstarch. One its smooth then take it off the heat immediately. Hope that helps! :)
I made this cake today. The flavour is very rich and is super soft. I will do it again, but next time, I will use less sugar, the cake himself was way too sweet for my taste 🙈

How can we adjust cooking time if we double the batter?
Hi there! :) I wouldn't recommend adding too much batter into one cake tin, so if making double the batter, you would want to distribute it into four 8inch cake tins or two larger cake tins. Because of this, the cooking time will be roughly around the same as the original baking time :) Hope that helps!

I have made cakes by you before and all fantastic!...this one tasted amazing but was disappointed on how this the cake layers were! they were not as high as yours and I followed the recipe to the letter, and went over it again and again ti see if I missed something....I noticed that in your instructions you say to add in baking soda with the dry ingredients....but in the video and in the ingredient list there is no baking soda listed...not sure if that would have any impact on the rising of the cake. I guess I will have to make it again and see...just curious how many grams of did each of your cke pans weigh with the batter? mine were about 987 grams each with the batter and I have the same size cake pans as you.

This might be silly but can I bake this as a sheet cake and then cut it in half to make the layers. I want to bake it tonight and I don’t have the right baking pans
Yes you definitely can,I also don't have the right baking pan,but I'll do it similar to how you will do it.
Heya! :) Yes you could do that, though the layers may be a bit thinner and due to the cake being quite soft the thinner layers may be harder to manage. Just be sure the cake layer is completely cool before trying to torte it. You could also make 1.5x the recipe for a thicker cake that might be easier to torte. Alternatively, you could keep it as one layer and put the frosting and lemon curd on top :D Hope that helps and hope you enjoy the recipe!

The top of the cakes were no more brown but pale yellow even before un-moulding (4:22) !! They appeared brown in the oven though ( 4:17). What is the technique??
Hi there! Good question :) This is simply due to the lighting - it looks brown in the oven but thats simply because there is less light so everything looks darker than it actually is :) Hope that helps!

Thank you so much! :D This is likely due to your cake being too high in the oven. Try placing it one rack lower in the oven and see if this helps :) If you find that your cakes are slightly overbaking too, then it could also be that your oven is running a little hot, so you could reduce the temperature slightly too. Hope that helps! :)

I made it, the texture is spot-on spongy and moist in all the right ways. but, let’s talk sugar. There is a sweetness overload that even coffee can’t balance out. Ended up with a headache. My advice? Go easy on the sugar to let that lemon shine without overpowering.
What exactly is the difference between this and the original recipe? Would help if you tell us what’s making the cake better.
