This is probably a stupid question but where is the air you are adding to the milk coming from? The steam wand injects steam which is water vapour. This will condense to water as soon as the temperature is
Its a brilliant question!! I do see beginners struggle with this concept so I usually omit it altogether. But what's happening is the force of the steam is pushing the milk away and leaving an air gap where the milk was. That air gets mixed into the milk and when the whey proteins β-Lactoglobulin starts to denature from heat, the hydrophobic end of the proteins essentially encased the air bubbles in the milk.
@@EmileeBryant Thank you for taking the time to reply. There's some interesting chemistry going on in that pitcher of milk.
@@EmileeBryant Latte art champion indeed.
@@EmileeBryant waoo ! you could added this proteins parts to your video and could made it even longer 🤭
Imagine you’re using presure cooker.
You have a cool way of talking and are great at communicating
Thank you so much! I could ramble about coffee for days 😅
Exactly…she’s adorable

I know right reason why I subscribed!!!
I’ve been a barista for 5 years and this was the best tutorial in regards to steaming milk that I’ve ever seen, or trained to do. Explaining in depth the reasoning/science behind it made it so much easier to remember. I hate when people don’t explain the “why” to things and expect me to care more about applying those lessons😅
This looks like you’ve had this channel for YEARS, super professional. Well done!
Billy! Thank you so much! Man I have been missing our boomtown hangs.
Girl you are such a natural communicator! Fantastic tips. Thanks so much
How did I only just come across this (and you) after struggling for months with milk texture!? Thank you for spelling all of this out in detail and for making it enjoyable to watch. I feel confident about the milk I'm going to steam tomorrow.
I've been guilty of longer paper tears, but now I know better thanks to you. "Listen for the chirps with the multiple spurts." Thanks for the video!
I am so glad this was informative! Rhymes can be so helpful! I rhyme all the time.
You are clearly a poet, but I didn’t know it.
Clear, concise, articulate. Brilliantly done. Worth a subscribe.
I know it's a 2 yr old video so you probably won't see my comment but I had to say: Thank you! you have no idea how much this video helped me trouble shoot my milk technique! Thank you for sharing the wisdom! ❤ from the land down under 🇦🇺
So happy to hear this helps! I hope you continue to thrive in your coffee journey. Wow two whole years!! Crazy!
@@EmileeBryant , I wish YT allowed me to share a photo of my fixed milk here, I can't believe how much better it is now...
Thank you for actually breaking this down verbally. No one else has explained this as well as you !
I am not a barista - just a coffee lover who got an espresso machine for her birthday. This is EXACTLY what I needed to hear. I have been adding too much steam and making foam!!! And, btw, I've subscribed because your sense of humor and delivery of your video is fantastic! Thank you!!!
i got a bartender job about 5 days ago and the milk was giving me such headaches. i kept messing it up. yesterday, i watched this video and applied everything, and it helped me out a ton. i was actually satisfied with almost all the macchiatos i made today. thank you so, so much for explaining everything so well! 💖
hey!! its been a few months , hows it going :)?
@@asmaalem8090 ah, thanks for checking in! unfortunately, as soon as my temporary contract (err not sure what the term is in english) ended, they decided to take someone else instead. rip. it was still a fun time though :)
@@xioxialt ahhh it’s okay!! Experience is always a good thing and glad you had so much fun!!! Wish you all the best xx
Same for me! I can make cocktails but this milk is the weak link!!
I'm literally 2 minutes and 27 seconds in and I can already tell that we are going to get along JUST fine. I already love you and your ways of explaining
Beautiful! Lived in Italy 32 years and I never knew all these marvellous tips so thank you!
As a barista in training this is really useful! in my work I've been thrown in the deep end with making coffees and my milk definitely needs work, I have spotted a few of my mistakes here so thank you!!
Such a humble and involved video without pretentiousness! Thank you Emily!
This has been the most helpful video I’ve ever seen! I’ve watched so many videos on milk steaming and it never made a difference, but the change in my milk and latte art in the last two weeks is unreal! Thank you 🤍🥰
Your tips really helped me. I always had too much air. So the lifting jug to stop injecting air helped. Now the patterns are more defined
Liking this before I watch it because of course.
Thank you for the support!!
Liked this ~hard~ before I watched as well
Yeah! Finally seen milk after 4 videos, felt like Phoebe teaching Joey (don't you dare touch a guitar) 😂😉
Thanks for all the advice ... am I stupid to ask advice on a milk jug to go for please ?
Not pretentious, very practical and insightful. Thank you for no BS.
Ms. Emilee, your mastery of this art is only surpassed by your ability to explain these concepts simply. That is the true mastery of any art. Thank you for your excellent video and may God bless you in all your travels.
Lovely! Really accurate guide, great job. I've been doing barista for a year and I think this is everything you need to know to get good at it. I mean, you covered everything. Amazing I can't wait to put this to work
Amazing video, really well explained and easy to follow even for beginners. I worked as a barista my first few years in London but have been working in finance in the last 3/4 years. I am now starting a business so I want to get a weekend job as a barista just to cover main expenses and I thought I would get a refresher on all of it. I am so glad I got amazing training to begin with years ago and these things still stuck with me because I didn't find any new info in the video and that's a good sign! Many thanks!!
This video made me fix almost every mistake I was doing. My coffee was never as creamy and tasty. Thank you for sharing your experience Emilee. Amazing stuff ❤
I'm so glad I finally found about your channel and content. It's like I've been following you forever, and I will!
THANK YOU! I've watch many videos but none as thorough as yours. Love your dynamics! Now I gotta see all your videos...AND PRACTICE. I am so frustraded, have taken seminars, practice a lot and when I think I almost got it, go backwards again. Thanks again!
Love your work Emilee, instructional truths and comedy 🤩.
Thank you for these tips!! New barista here and I am already in love with crafting coffees.
I really appreciate the knowledge and quirkiness from Emilee. I also use to work with an Emilee at coffee shop many years ago and if you’re anything like her then you’re good people :) Thank you for the video!
Best coffee channel knowledge I have ever come across, thanks Emilee
Thanks for putting this together. It's consistent with a lot of other videos I watched, but this summerized everything for me. It looks simple, but it's very hard to get it right!
Brilliant. Really informative and technical. Love that you provided a simplified technical explanation whilst also providing the occasional visual examples. Will be trying these tips out.
This video is super informative and you're very naturally funny so it's not boring like most instructional videos. Thank you
No one has ever explained the importance of the vortex to me, thank you! New coffee truck and learning all I can. LOVE your videos!
I had watched nearly hundred of videos, none of them described as clear as this. Thank you Emilee.
I started in a coffee shop yesterday and this helped so much
Thanks for sharing your knowledge Ms. Emilee. ❤️
I learned to foam milk yesterday, I was doing the method everyone told online until I found a comment that said '' dont put the buse IN the milk but rather on the side of it, not too deep '' game changer, oat milk foams so nicely
Thank you. This will really help me at my job. I'm a new barista so this is great.
Easy to listen to. Thank you for sharing!

Emilee...thank you for the great tips. I just purchased a bodem frother wand and third try today was successful after watching your vlog. .made my morning! 🤗☕
Thank you for your advice Emilee. I have not long started working with a barista style coffee machine. Never seeing one behind a bar. I was a bit wary by this contraption. However your videos have helped me become more comfortable around them. So thank you 😃
Gosh it's so helpful and I love her voice they sound so warm
Girl, thank you so much. I've been working in a cafeteria for a week and steaming the milk was a nightmare. You just pinned my main mistake, I'll try the tips tomorrow!
We just got a espresso/Cappuccino machine so I just learned how to operate it. But I truly needed to know the art of steaming or froth it. Thank you so much I understood it all. Keep up the Great advice love it!
Just starting out with our new machine. Great video, easy to understand. Thank you 😊
This is extremely helpful for reflection, as my first shift on milk steaming station was just the other day.

Best video on “how to” I’ve seen. Thank you!
Thank you for sharing your expertise.
I love these videos. Thank you for putting them out!
Thank you Emilee, you've been clear
found your channel researching the bellman.. I've been missing my barista days and this brought so much back! happy to report i was pretty well trained so learned not to do any of these lol. been looking at the Flair and Bellman as an entry point to getting back to making drinks at home. Using a moka pot and an immersion blender to whip the milk, which is tasty for what it is, but could be so much better..
This was so helpful! and adding linn when you said “rise up” made my day haha. Thank you!!!
Such good tips, pointing out almost all my mistakes. Thanks.
Love your personality and your awesome teaching technique! I am a newbie, at-home barista wanna be, and this was extremely helpful.

you've gotta be the most real and like-able youtube personality I've seen in a long time... thank you
I'm researching for my ideal home set up after not working in coffee for a while...but I did for 9-10 years of my life (started almost 20 years ago) and I was watching this video to see if I could test myself on what mistakes you'd mention and HOW they affect the milk....and I passed my own test. 🤣 I miss working in coffee so much and I'm so glad I had such great training and exposure as a young barista! So cool to see all the content on KZhead these days about it.
This is the first video of yours that I've watched. Loved it. Super clear explanation and love the humour you bring. Thank you! Looking forward to watching the rest ❤️👍
