Composers had nothing but these imprecise terms, and then one day this Maelzel guy came along, invented a metronome, and composers could be precise.
As an Italian person I can say that those names for the speed of the song really give us a good idea of what the speed is and give more personality to the name of the rythm

Tom Lehrer often had fun with his tempo and style directions. Tempo advice for his composition 'I Wanna Go Back to Dixie' was "A little *too* fast"

We once had a piece (sorry, I forget the name) marked "Molto Moderato." We could NOT figure out how you can get more medium than medium.
