Well... After ch 1080, i guess the reason why Sengoku is so shocked probably because he already see the future with his observation haki, and see Akainu got wrecked by Garp. That's why he said "Have you gone mad?!"
I love how we Garp fans came back to this video just to prove that Sengoku really did save Akainu. Take note that Garp was laughing at chapter 1080. Now imagine what an angry Garp can do.
