  • Like when making gum drops, it was best to leave out uncovered at least a day to dry out before final coating and also not make on humid days.

  • Commercially, they use drying rooms to bring down the water activity of gummy products and to get them to the desired texture. Homemade gummies made this way will not have the shelf life of a commercially prepared product because of this, and that's also why the sugar dissolves so readily. I have played around with homemade gummy bears in the past, but haven't done it for ages, so it was fun to see this video to get me interested in trying to make my own again. It's not easy for home cooks to do if you're looking for something like you would get at the store, but you can still come up with fun treats!

  • Gemma, Thanks for the gummy updates. I use gelatin sheets and not the powdered gelatin. Is it possible to subsitute 2 gelatin sheets for the powdered gelatin. I like working with the sheets and that is what I have on hand. I need bigger gummy molds the one I ordered was very tiny, but it came with a dropper to fill them.

    • Yes, absolutely. One tablespoon of gelatin powder is equivalent to 4 sheets of gelatin. Hope this helps.

  • I'm disappointed that you didn't redo the recipe with less agar agar to show that half actually works. No proof that half is correct. It may need to be 1/4 of the amount. Not sure why you didn't follow thru.

    • Ive used agar agar. And so far 2tsp of agar to 1 cup of fruit juice is sufficient. If the juice is acidic like orange juice or orange juice blends then up the agar to 2.5 or 3tsp per 1cup of juice. I tried these combinations multiple times and have been very satisfied. Apple juice has worked the best....and no straining necessary after boiling. Hope this is helpful. My simple recipe is the following 1 cup fruit juice; 2tsp of agar agar and 1 tsp of honey. Bring to boil then let simmer for 5 min. Use a dropper and transfer to molds while liquid is hot. If the liquid starts to thicken reheat and continue transfer. Sets in 20min at room temperature. Can set in fridge for faster setting. ENJOY

    • Gelatin n agar2 have different textures, its not gonna have the same result unfortunately, its just way too different...gelatin r a lot chewy n agar2 doesnt have that textures at all, maybe instead of agar2 u can try jelly but again its not gonna give the same result , the gap r way too far

  • Hi Gemma. Try using a dextrose equivalent of 35-55. Certain glucose syrups have different equivalents, some 20 which is low and some higher at above 55 - both not suitable for Gummy Bears. 35-55 is ideal. Best of luck, grà o bhaile 🇨🇮

  • I always whisk my dry gelatin powder into the hot liquid and cannabis oil and as long as I'm whisking non-stop I never get lumps and it always sits perfectly

  • Agar doesn't really need to go into the fridge, it sets at room temperature. The ratio is wrong lol It depends a lot on what you're making (the water content, the shape of it, the desired consistency) aaaaand some agar powder brands are bad. Could've used some more experimenting with this one.

  • Hi Gemma😊 I made these gummies last week with 400 ml of orange juice and 2 tsp of Agar Agar ( the recipe says so). I put it in the fridge (says for 2 hours) but they were not ready. Then I let these guys the hole night in the fridge but the result was that these were not gummy but a kind of gelatine 😡😭😭😭😭😭. I must try your recipe😉. Thank you for explain us all the technics.❤

  • always bloom gelatin before adding. if gummy's are dissolving sugar, let air dry longer. sugar citric acid mix is personal preference, I use 1c sugar with 4tsp CA. not setting, make sure you get mixture to softball temp at minimum.

  • How do you bloom the gelatin?

    • You will need to “bloom” the gelatine before you use it, so this means soaking the gelatine for 30 mins or more in 3 to 4 times its own weight of water, or other liquid and then heating it up over some form of double boiler or the microwave, until it forms a clear liquid.

  • I need help making yeast bread. I want the bread to be soft and stretchy with a good taste. Everytime i try the bread comes out heavy gummy or dry and crumbly with an overwhelming taste of yeast. 😢

  • Let the gummies stand for 2 days and lay flat for 1 day so they dry out. This will keep them from molding as fast and will allow them to coat better

  • I coat my gummies in sugar in the centric acid and they don't dissolve. Although I do a lot different method than what you guys have done , so maybe that's why.
